Ingredients

  • 1 tsp Garam Masala
  • 1 tsp Ground Turmeric
  • 1 tsp Salt
  • 400 g SuperValu Beans drained and rinsed, or 250g dried beans
  • 350 g SuperValu Diced Lamb diced into small pieces the size of a stock cube
  • 1 handfull SuperValu Fresh Coriander chopped
  • 1 tbsp SuperValu Fresh Ginger grated
  • 2 - SuperValu Tomato ripe, chopped into small pieces
  • 4 tbsp Vegetable Oil

Method

  1. If you’re using dried beans, soak them for at least 8 hours in a large bowl of cold water, then drain. 
  2. Heat the oil in a large heavy-based pot. Once it starts to smoke, add the lamb pieces, turmeric and salt. Cook for 1 minute, then add the beans. Stir and cook for 1 minute more, until the beans are well mixed with the lamb, then add the tomatoes and garam masala. Cook for another minute or two, until the tomatoes are soft. 
  3. Add 3 mugs of boiling water, cover the pot and cook for 40 to 50 minutes on a medium heat, until the beans are fully cooked and soft if you’re using dried beans. 
  4. Once the dish is cooked, add the ginger and a little more water to ensure the dish has a stew consistency. Garnish with fresh coriander and serve.
