Mean Bean Salad

If you need to feed a crowd in a hurry then this recipe is ideal either as a main or side. It's so easy, healthy, and works well with any beans although I think cannellini beans or chickpeas are best. Tinned beans are the greatest kitchen cheat ever; no soaking or cooking required, just rinse well.

Ingredients

  • 1 punnet Cherry Tomatoes halved
  • 3 - Chickpeas drained & rinsed
  • 1 - SuperValu Carrot finely grated
  • 0.5 - SuperValu Chillies finely chopped (Optional)
  • 0.5 cup SuperValu Parsley finely chopped

Dressing

  • 1 tbsp Balsamic Vinegar
  • 1 pinch Black Pepper
  • 2 cloves SuperValu Garlic minced
  • 2 tbsp SuperValu Olive Oil
  • 0.25 tsp SuperValu Salt

Method

  1. Combine all ingredients and leave for an hour in the fridge (if you have time!) so the beans absorb the other flavours.
  2. Add crumbled goats cheese or feta – use less salt if you do.
