Ingredients

  • 1 - 'A Taste of Irish Spirit' Poitín Marmalade
  • 2 - Carrots , chopped
  • 4 - Garlic Cloves , chopped
  • 1 - Green Pepper , chopped
  • 1 - Leek , chopped
  • 4 - Onions , finely chopped
  • 1 bunch Parsley , chopped, optional
  • 1 - Red Pepper , chopped
  • 2 tbsp Sunflower Oil
  • 8 - SuperValu Jumbo Sausages
  • 800 g SuperValu Mixed Beans
  • 800 ml Vegetable Stock
  • 1 - Yellow Pepper , chopped

Method

  1. In a large saucepan, over medium heat, drizzle some oil and add the sausages. Sauté until coloured on all sides.
  2. Add the onions, garlic, leek, carrot, red, yellow and green peppers. Stir and sauté for a further 2-3 minutes.
  3. Pour in the drained mixed beans and the vegetable stock. Season well and bring to the boil with a lid on.
  4. Simmer over medium/low heat for 25-35 minutes until the vegetables and sausages are fully cooked.
  5. Remove from the heat and check the seasoning.
  6. Just before serving, stir through some fresh parsley and enjoy piping hot.
  7. Portion the leftovers, label the container and store in the fridge for up to 2 days, or freeze until needed.
