A tasty and simple homemade chicken noodle soup, just perfect for those Winter months!

  • 1 litre Chicken Stock Cube
  • 200 g Egg Noodles
  • 1 - Fresh SuperValu Mixed Chilli
  • 1 - Pak Choi
  • 2 - SuperValu Fresh Chicken Fillets
  • 2 tbsp SuperValu Fresh Coriander (Optional)
  • 2 cloves SuperValu Garlic
  • 1 - SuperValu Leek thinly sliced
  • 1 tbsp SuperValu Olive Oil
  • 1 - SuperValu Onion diced
  • 0 - SuperValu Salt
  • 1 tbsp SuperValu Soy Sauce


  1. Heat a large saucepan with 1 tbsp olive oil and add the leeks, onion, garlic, chilli and pak choi. Season lightly with some salt and cook over a medium heat until the vegetables begin to soften (approx 3 – 5 minutes)
  2. Add the chicken and stirring gently allow to cook for a minute or two. Add the hot chicken stock and soy sauce and bring to the boil and then add the noodles. Reduce the heat slightly and leave to cook for 5 minutes until the noodles are softened.
  3. Before serving check the seasoning, add the chopped coriander, stir and serve.
