Who doesn't love a ham and cheese sambo? Even so, it can get boring after a while, so change it up a bit with these pinwheels instead. These would also work well with thinly sliced turkey and a pinch of dried dill instead of the ham and chives. A big platter of these pinwheels would also work well for a birthday party, as they can be made ahead of time.

Ingredients

  • 4 tbsp Light Cream Cheese
  • 1 handfull SuperValu Baby Spinach (optional)
  • 2 tsp SuperValu Fresh Chives or parsley
  • 4 slices SuperValu Quality Irish Ham Fillet thin slices
  • 2 small Wholewheat Wraps or tortillas

Method

  1. Place the cream cheese in a bowl with the chives or parsley and mix together until well combined.
  2. Lay a wrap flat on a large cutting board. Spread half of the cream cheese over the entire wrap, right to the edges to help it stick together. Place 2 slices of ham in the middle of the wrap, slightly overlapping so that the ham covers the entire width of the wrap. Scatter some baby spinach leaves on top of the ham, if using (it will add a nice bit of crunch and colour to the pinwheels, not to mention some added goodness too).
  3. Tightly roll up the wrap like a Swiss roll, as you want to create a nice swirled pattern when you cut the wrap. Trim off the ends, then cut the wrap into 2.5cm thick slices to create pinwheels. Pack into an airtight container or ziplock bag.
  4. Pack the pinwheels with fresh fruit, such as sliced apple, a peeled and segmented clementine, a small banana or a handful of grapes, a container of fresh veggies, such as carrot sticks, cucumber batons, sliced red peppers or halved cherry tomatoes, and a bottle of cold water or unsweetened fruit juice.
