This dish is delicious and perfect if you want to impress with something a little different.

  • 2 - Red Onion
  • 1 - SuperValu Aubergine
  • 300 g SuperValu Hake Fillets (from the Fish counter)
  • 2 - SuperValu Tomato sliced

From the Store Cupboard

  • 25 g SuperValu Butter
  • 3 tsp SuperValu Dried Mixed Herbs
  • 100 g SuperValu Fresh Breadcrumbs
  • 2 cloves SuperValu Garlic
  • 1 tbsp SuperValu Olive Oil
  • 150 ml Vegetable Stock


  1. Slice the aubergine into large slices, about 1cm thick.
  2. Using 1 tbsp olive oil sauté in a large frying pan for 2–3 minutes each side.
  3. Finely slice the garlic and onion and add to the pan, cook for a further 2 minutes.
  4. Place the hake into an ovenproof dish and add the stock or water.
  5. Place the onion, garlic and tomato slices on top and finish with a layer of aubergine.
  6. Meanwhile, put the breadcrumbs in a large bowl and add the dried herbs.
  7. Melt the butter in a small pan and pour over the breadcrumb mix.
  8. Spoon a layer of breadcrumbs over the aubergine and place in a preheated oven 180°C/350°   F/Gas Mark 4 for 20 minutes.
  9. Serve immediately with some salad leaves of your choice or crusty bread.
