Goat’s Cheese & Pesto Pizza Goat’s Cheese & Pesto Pizza

  • 5 - Cherry Tomatoes (Cut into Halves)
  • 150 g Onion (see below)
  • 3 - Red Onion (Cut into 8 wedges)
  • 50 ml Red Wine
  • 50 ml Red Wine Vinegar
  • 1 tbsp SuperValu Basil Pesto
  • 50 g SuperValu Brown Sugar
  • 70 g SuperValu Goats Cheese (Cut into Slices)
  • 1 - SuperValu Pizza Base
  • 1 pinch SuperValu Whole Black Peppercorns


Caramelised red onions base with goat’s cheese, pesto and cherry tomatoes. For the pizza base you can buy readymade, but if you prefer the recipe for pizza dough is below – alternatively I sometimes use puff pastry, for a quick tasty snack. To make the red onion marmalade:

  • Place the onions, brown sugar, red wine and red wine vinegar into a pan and cook over a medium heat for approximately 25 minutes, until the onions have softened and caramelised. Remove from the heat and allow to cool slightly.

To make the pizza:

  • Preheat the oven to 180ºC/350ºF/Gas Mark 4.
  • Roll out your pizza base, then add a generous layer of the red onion marmalade. Top with tomatoes, goat’s cheese and drizzle with pesto. Place into your preheated oven for 15-20 minutes. Serve immediately once cooked.
