Operation Transformation Recipe

Ingredients

  • 115 g Chickpeas drained, rinsed and dried
  • 0.5 tsp Chilli Powder
  • 1 clove Garlic chopped
  • 0.5 tsp Ground Cumin
  • 2 tbsp Plain Flour
  • 1 tbsp Rapeseed Oil
  • 0.5 small Red Onion chopped
  • 0 - Salt
  • 0.5 tsp SuperValu Fresh Coriander
  • 1 handfull SuperValu Fresh Parsley Flat Leaf chopped
  • 2 - SuperValu Wholemeal Pitta Bread
  • 100 g Tomato Salsa

OT Side Salad

  • 100 g Cherry Tomatoes
  • 8 slices Cucumber
  • 100 g SuperValu Baby Spinach

Method

  1. To a bowl, add chickpeas, onion, garlic, parsley, cumin, coriander, chilli, flour and a pinch of salt. Use a hand blender to blend until smooth.
  2. Form into 6 patties.
  3. In a non-stick frying pan heat the oil and then add the patties.
  4. Fry for 3 minutes on each side or until golden brown.
  5. Make your OT side salad by mixing baby spinach, cherry tomatoes and cucumber.
  6. Toast your pitas.
  7. Slice the pittas open and add a spoon of salsa and 3 falafel patties.
  8. Serve the falafel pitta, with the side salad.
