Crostini is the Italian for small toasts, and makes a delightful canapé. You can top with your favourite toppings, of prawns, olives or just cream cheese.

Ingredients
150gCream Cheese
1tbspRapeseed Oil
1 - SuperValu Baguette
very thinly sliced (5mm)
1 - SuperValu Cucumber
thinly sliced
1tbspSuperValu Fresh Dill
1 - SuperValu Lemon
juice & rind
225gSuperValu Smoked Salmon
Method
Lay the thinly sliced bread onto a baking tray and drizzle with a little oil.
Place into a preheated oven for 4-6 minutes until crisp.
In the meantime, place the cream cheese, lemon rind and dill into a bowl, stir to combine. Slice the smoked salmon into strips.
Once the Crostini are removed from the oven allow to cool for a minute or two, then smear with a little cream cheese and top with a slice of cucumber and salmon.
