Coconut and Chocolate Flapjacks

  • 125 g Butter
  • 50 g Dark Chocolate cut into chunks
  • 50 g Desiccated Coconut
  • 4 tbsp Golden Syrup
  • 200 g Porridge Oats
  • 125 g SuperValu Brown Sugar


  1. Preheat oven to 180 degrees C.
  2. In a food processor blitz the porridge oats, butter, brown sugar, and coconut together. Don't over do it as you want the oats to keep their texture.
  3. Mix through the chocolate.
  4. Lightly grease a baking tin with butter and spoon in all the mixture.
  5. Using the back of a spoon press into the corners so the mixture is flat and score the mixture into 12 squares.
  6. Place in the oven and bake on 180 until golden brown (about 20 minutes).
  7. Score the mixture again when it comes out of the oven if the squares have been lost.
  8. Allow to cool and then remove from tin.
