Operation Transformation Recipe

Ingredients

  • 240 ml Beef Stock
  • 400 g Black Beans (240g drained)
  • 0 - Black Pepper
  • 0.5 tsp Chilli Powder
  • 400 g Chopped Tomatoes canned
  • 1 tbsp Cocoa Powder
  • 2 cloves Garlic chopped
  • 500 g Lean Round Steak Mince
  • 0.5 - Onion chopped
  • 2 tsp Paprika
  • 2 tbsp Rapeseed Oil
  • 1 - Red Pepper chopped
  • 0 - Salt
  • 0.5 bunch SuperValu Fresh Coriander chopped
  • 1 medium Sweet Potatoes chopped (240g)

Topping

  • 40 g Cheddar Cheese grated
  • 40 g Low Fat Natural Yogurt

Method

  1. Preheat oven to 190C.
  2. In a bowl toss the sweet potatoes and peppers with 1 tablespoon oil. Season with salt & pepper if desired and spread out in a single layer on the baking sheet.
  3. Put in oven and roast until tender - about 20 - 30 minutes.
  4. In a large pot add 1 tablespoon oil over medium - high heat. Add onion, stirring often until soft.
  5. Now stir in the garlic, paprika and cumin and cook for a further few minutes.
  6. Add the mince meat, and cook until it browns.
  7. Add in the beans, tomato, stock and cocoa and stir. Bring to a gentle simmer.
  8. Remove the roasted peppers and potatoes from the oven and add to the pot and stir.
  9. Serve each portion with a spoon of natural yogurt and cheese and sprinkle with coriander.
