3 - Corn on the Cob
(cooked and corn kernels removed and retained)
0 - Red Onion
(1/2 of the onion, very thinly sliced)
1tbspRed Wine Vinegar
100mlSuperValu Extra Virgin Olive Oil
6 - SuperValu Radishes
(thinly sliced)
0 - SuperValu Rocket Leaves
0 - SuperValu Salt
1tbspSuperValu White Wine Vinegar
Method
Combine the shallot, white wine and sherry vinegar in a bowl and season with some salt and pepper. Allow to macerate for 15-20 minutes. Whisk in the oil and add more seasoning if required.
Place the corn kernels into a bowl and pour over some of the vinaigrette. Add the tomatoes, radish, red onion and rocket and toss gently with the corn. Drizzle with the remaining vinaigrette and serve.
Crumbled Feta cheese makes a wonderful addition to this salad if desired.
