  • 4 large Carrots peeled
  • 1 tbsp Olive Oil
  • 50 g Raisins
  • 2 medium SuperValu Orange


  1. Roughly grate the carrots into a bowl. Remove the peel from the oranges with a sharp knife. Hold each orange over the bowl and divide into segments, squeezing any juice from the remaining membrane onto the carrots. Add the raisins and olive oil, mix well and refrigerate for 2 to 3 hours to allow the raisins to plump up.
