Breaded Fish Fingers and Sweet Potato Crisp

Ingredients

  • 0 - Black Pepper
  • 1 - Fresh Egg white only
  • 1 pack SuperValu Breaded Fish Fingers 6 Pack 330g
  • 0 - SuperValu Salt
  • 2 - Sweet Potatoes
  • 2 tsp Vegetable Oil

Method

  1. Preheat the oven to 220°C.
  2. In large bowl, whisk egg white until frothy; whisk in oil, salt and pepper.
  3. Add sweet potatoes, tossing to coat.
  4. Bake on parchment paper–lined baking sheet in the oven, turning once, for about 15 -25 minutes or until tender and edges are browned and crisp.
  5. Meanwhile, place the fish on a baking tray and Bake in the oven, turning once, for about 15 minutes or until dark golden and fish flakes easily when tested.
