The beetroot blends well with the beef to make really moist burgers that kids love. They’re a great way of sneaking in extra vegetables for a fussy eater.

Ingredients

  • 115 g Beetroot raw, grated
  • 4 - Cherry Tomatoes to serve
  • 2 - Cucumber batons, to serve
  • 1 pinch Ground Black Pepper
  • 1 tbsp Olive Oil for cooking
  • 1 - Shallots finely chopped
  • 8 - Wholemeal Bread mini rolls, or pitta bread, to serve
  • 450 g lean minced beef

Method

  1. Combine the beef mince, beetroot and shallot in a large bowl and season with black pepper. Divide the mixture into eight mini burgers, then chill in the fridge for 15 minutes.
  2. Heat a little olive oil in a pan set over a medium heat. Cook the mini burgers in batches for 3 to 4 minutes on each side, making sure the burgers are cooked through.
  3. Serve in mini wholemeal rolls or pitta bread with cherry tomatoes and cucumber batons on the side.
