Ingredients

  • 200 g Barbecue Cowboys Baked Beans
  • 25 g Butter
  • 2 large Eggs
  • 1 pinch Salt and Pepper
  • 2 slices Sourdough Bread

Method

Toast the slices of bread and spread some butter on the bread and keep aside.

Place the beans to warm up for 2-3 minutes until piping hot. Set aside.

In a sauté pan over medium heat, drizzle some oil add the fried eggs and cook for a minute. Add the butter and cook for a further 2-3 minutes basting the eggs with the foaming butter.

 Remove from the heat.

Build by placing the toasted bread on serving dishes then spoon over some warm baked beans and top each sandwich with the fried eggs. Serve immediately with a sprinkle of salt.
