Baked Sweet Potatoes with Curried Lentils

Aveen Bannon shares her recipe for healthy baked sweet potatoes.

  • 1 tin Chopped Tomatoes 400grams
  • 2 cloves Garlic finely chopped
  • 150 g Green Lentils
  • 2 tsp Ground Cumin
  • 1 pinch Ground Ginger
  • 1 tsp Ground Turmeric
  • 1 tbsp Medium Curry Powder
  • 1 drop Olive Oil
  • 1 - Onion medium in size, chopped
  • 1 pinch Pepper
  • 1 pinch Salt
  • 4 - Sweet Potatoes

To Serve:

  • 4 portions Creme Fraiche
  • 4 sprigs SuperValu Parsley chopped


1. Preheat the oven to 200°C/gas mark 6.
2. Place the whole sweet potatoes on a baking tray and roast in the oven for 40 to 45 minutes, until cooked through. While the potatoes are cooking, cook the lentils according to the packet instructions.
3. Drizzle a little oil in a saucepan set over a medium heat. Add the onion, red pepper and garlic and cook for 3 to 5 minutes, until soft. Add the spices and a little salt and pepper and cook for
another 2 to 3 minutes before adding the tomatoes and simmering for 5 minutes. Lastly, add the cooked lentils and simmer for another 5 minutes.
4. Cut open the baked sweet potatoes lengthways and spoon on the curried lentils. Serve with a spoonful of crème fraîche and garnish with some chopped fresh parsley.
