Avocado salsa with red onion, tomato and pesto

Ingredients
- 1 - Red Onion
- 2 - SuperValu Avocado
- 1 tbsp SuperValu Pesto
- 2 - SuperValu Ripe Vine Tomatoes
Method
- Scoop out the avocado and cut into chunks, setting aside the empty avocado skins
- Chop the tomatoes and red onion into similar sized chunks
- Mix together and drizzle with pesto
- Divide the mixture between the empty avocado shells to serve
