Shortbread biscuit is always a winner for a simple afternoon treat or an easy dessert! Serve with a sparkling wine or some delicious Fruity Donnybrook fair lemonade. To cut down on preparation time, get the ready to use icing but this homemade version is worth trying out!

Ingredients

  • 120 g Butter (100g + 20g) butter, softened
  • 50 g Caster Sugar plus extra for sprinkling
  • 100 g Cream Cheese
  • 1 - Egg for egg washing
  • 230 g Icing Sugar
  • 200 g Plain Flour
  • 100 g Raspberries
  • 200 g Strawberries
  • 1.5 tsp Vanilla Bean Paste

Method

  1. Preheat the oven to 180˚C.
  2. Line a baking tray with parchment paper.
  3. In a bowl, beat 100g of butter, the caster sugar, and some vanilla paste together until smooth.
  4. Stir in the flour and combine to a smooth paste.
  5. Transfer the dough on parchment paper and gently press the dough until flattened uniformly about 5mm thick or thicker. Using a heart shape biscuit cutter, cut 6-8 biscuits depending on the size needed and with a small heart shape biscuit cutter punch a smaller heart-shaped in the centre of the cut biscuits.
  6. Remove the excess and roll again to make a few more if possible.
  7. Place the shaped biscuits on a baking tray and brush them with egg wash and a sprinkle of caster sugar. Chill in the fridge for 10 minutes.
  8. Transfer to the oven and bake for 15 minutes or until pale golden-brown. Remove from the oven and set aside to cool on a wire rack.
  9. In the meantime, prepare the cream cheese frosting. In a bowl, combine the cream cheese with the rest of the butter and some vanilla paste until smooth.
  10. Slowly sieve over the icing sugar and beat in the cream cheese mixture.
  11. Don’t overbeat the mixture, once smooth, transfer immediately in a piping bag and let settle in the fridge for 15 minutes.
  12. Once cooled, prepare the biscuits, on a board or a platter, place the heart-shaped biscuits. Pipe over some cream cheese icing. And decorate with fresh berries, a dusting of icing sugar and a few flowers if desired around the biscuits.
  13. Garnish with fresh flowers, optional.
  14. Enjoy within a few hours.
