Theresa, from Stoneybatter, makes amazing Mexican foods inspired by her husband Gustavo and years of living in Mexico. Theresa was a founding member of the Temple Bar Food Market and soon, people were lining up for catering and jars of salsa, thus began Mero Mero Mexico.
In 2013, Theresa started a funky Mexican vintage mobile food truck, Mexico K Chido, and her menu gets rave reviews on social media and print press.
Theresa’s salsa, pickles, marinades; are genuine Mexican flavour - unique in Ireland.
''I started on the Food Academy program in 2015, giving tastings of Enchilada Verdes, Chipotle Catsup and Salsa Adobada, which were deemed excellently tasty, but my FRIJOLES Black Bean soup was the most popular! This soup has a cult status at the TB market. Vegan, peppers and black turtle beans with my special spice blend. Yummisima! In BBQ weather this soup makes a great stir in for a beef or (veggie) CHILE CON CARNE/CHILE SIN CARNE."

With the guidance from Food Academy, I got it up to spec and licenced to manufacturing for retail.
