400 g Cooked Lentils

450 g Frozen Peas

300 g Leeks

1 - Lemon
juice and zest -
1 pinch Pepper

1 tsp Salt

200 g SuperValu Baby Spinach

1 - SuperValu Courgette
medium size -
2 tbsp SuperValu Olive Oil

2 tbsp Tamari
For the mash:
-
100 ml Oat Milk
-
1 pinch Pepper
-
1 pinch Salt
-
2 tbsp SuperValu Olive Oil

2 kg SuperValu Potatoes
To Serve:

180 g The Happy Pear Lovely Basil Pesto
Method
- Chop the potatoes the same size and put them in a large pot, cover them in water and put them on a high heat to boil. Drain and rinse the tin of lentils. Put the frozen peas in a bowl of warm water to thaw. Remove the mint leaves from their stalks and finely chop.
- Finely chop the leek, ensure to use the full length of it including the green part and finely chop the courgette too.
- While potatoes are boiling, time to cook the veg.
- Put 1 tbsp of oil in a large wide bottomed pan and put it on a high, when pan is hot, add the leeks, cook for 2 minutes while continuing to stir regularly. Add the courgette, frozen peas and spinach and mix it through, put a lid on, reduce the heat to medium and leave to steam for 5 minutes.
- Remove the lid and turn the heat up high to evaporate some of the moisture to try caramelize some of the veg. Cook for further 3-5 minutes stirring regularly.
- Turn the heat off, add the lentils, tamari, salt and black pepper, mint leaves and zest in the lemon and mix it all through. Taste and season to your tastes.
- When the potatoes are soft and boiled through, drain and rinse them. Mash them with oat milk, olive oil, salt and black pepper until smooth and to your taste.
- Into a family sized casserole dish, add the cooked greens and lentils on the bottom. Layer on the mashed potatoes on top. The dish should be approximately half cooked greens and half mashed potato.
- Bake in preheated oven for 15-20 minutes at 200C till the top starts to brown.
- Remove from the oven and drizzle and spread some Happy Pear lovely basil pesto on top. Enjoy!

Hi! I just made this and it is so good. My farmers’ market had fiddlehead ferns and lovage and I substituted those for the frozen peas and spinach. I pretended I was under a warm duvet of potatoes whilst eating it. :) Thank you for all that you do and please keep the recipes and videos coming!
