Method

  1. Mix chia seeds, coconut water, honey and vanilla extract together in a small bowl.
  2. Cover the bowl and leave to set in the fridge for 2 hours minimum or overnight for the chia seeds to gel.
  3. Just before serving, place a few berries and chopped fruit into a plate and spoon 2 -3 tablespoons of set chia.
  4. Drizzle with honey and serve immediately.
