Turkey, Leek and Cheddar Mini Quiche


They can be served either hot or cold but are best just warm.

Preparation time: 10 minutes

  1. Grease a muffin tray and cut the pastry into discs of 8cm diameter, push the pastry into the edges of the muffin tray.
  2. Blind bake in a preheated oven at 180°C/350°F/Gas Mark 4 for 15 minutes.
  3. In a large pan, quickly fry off the bacon, turkey and leek until cooked through and then spread them over the base of the lined pastry cases.
  4. In a separate bowl beat the eggs, milk and cream together with the seasoning and chopped parsley.
  5. Pour this savoury egg custard onto the turkey, bacon and leek filling in the tartlet cases.
  6. Transfer to the preheated oven and bake for 25-30 minutes until the egg custard is set.
  7. After the first 10-15 minutes in the oven, remove the quiche and scatter with the grated cheddar.
  8. Return to the oven to finish cooking.
  9. Serve warm or cold.
