RECIPE OVERVIEW

Ingredients

Serves: 4 people

  • 4 - Cardamom Pods
  • 1 - Cinnamon Stick
  • 220 g SuperValu Basmati Rice
  • 1 tsp SuperValu Chilli Powder
  • 2 cloves SuperValu Garlic
    thinly sliced
  • 150 g SuperValu Green Beans
    cut into 2cm long pieces
  • 2 tbsp SuperValu Olive Oil
  • 1 - SuperValu Onion
    thinly sliced
  • 300 g SuperValu Quality Irish Fresh Whole Turkey
  • 1 tsp Supervalu Ground Cumin
  • 660 ml Vegetable Stock
    warmed
To Garnish
  • 150 ml Natural Yogurt
  • 1 bunch SuperValu Fresh Coriander
  • 50 g SuperValu Goodness Flaked Almonds
    toasted

Method

  1. Heat the oil in a large heavy based pan over a medium heat. Add the cumin, chilli powder, cinnamon and cardamom pods and cook for 30 seconds.   Add the onion and garlic and cook until softened then add the turkey.
  2.  Add the rice and stir to coat in the flavored oil. Pour in the stock then add the green beans, bring to the boil then reduce heat and allow to simmer for 12 – 15 minutes until the liquid has been absorbed.   Remove from the heat.
  3. Leave the rice to stand for 5 -10 minutes then pour into a serving dish.
  4. Sprinkle with flaked almonds and fresh coriander and drizzle with a spoonful of natural yogurt.
