Method
- Preheat oven to 200C.
- Place the chicken in an oven proof baking dish.
- Mix the mustard, lemon juice, garlic, oil, and the thyme in a bowl. Cover the chicken with this mixture.
- Place foil over the chicken and place in the oven. Cook for 20 - 30 minutes until cooked through.
- In a pot of boiling water, place potatoes and simmer until cooked.
- Drain the water, add milk and sour cream and mash. Add chopped spring onion and pepper.
- Steam the broccoli.
