Ingredients

Serves: 2 people

  • 150 g Broccoli
    chopped
  • 2 - Chicken Fillets
    (approx 350g)
  • 2 tsp Dijon Mustard
  • 1 clove Garlic
    minced
  • 1 - Lemon
    juiced
  • 50 ml Low Fat Milk
  • 1 tbsp Rapeseed Oil
  • 1 tsp SuperValu Fresh Thyme
    (fresh or dry)
  • 1 - SuperValu Scallions
  • 2 tbsp SuperValu Sour Cream
  • 0 - White Pepper
    (to season)
  • 250 g Whole Potatoes

Method

  1. Preheat oven to 200C.
  2. Place the chicken in an oven proof baking dish.
  3. Mix the mustard, lemon juice, garlic, oil, and the thyme in a bowl. Cover the chicken with this mixture.
  4. Place foil over the chicken and place in the oven.  Cook for 20 - 30 minutes until cooked through.
  5. In a pot of boiling water, place potatoes and simmer until cooked.
  6. Drain the water, add milk and sour cream and mash.  Add chopped spring onion and pepper.
  7. Steam the broccoli.
