Tomato and Avocado Salad


This is my all time favourite salad and it marries fruit with vegetables very successfully, finished with just a very simple dressing. The recipe is easy to follow. It is also delicious with the vegetables chopped a little smaller and spread on toasted white soda bread as the topping for a bruschetta.

  1. Mix all the salad ingredients (except the rocket) together in a large serving bowl.
  2. For the dressing, mix together the lemon juice, olive oil, seasoning and the chilli flakes and pour over the salad or if you're watching what you eat, pour into a small ramekin or dish on the side.
  3. Allow to chill, then garnish the salad with the fresh rocket and serve.
