This simple, vegetarian, delicious dish is packed full of goodness & flavour.

Preparation time: 10 minutes

Cooking time: 10 minutes


Serves: 4 people

  • 400 g Baked Beans
    drained and rinsed
  • 400 g Chickpeas
    drained and rinsed
  • 0.25 tsp Chilli Powder
  • 800 g Chopped Tomatoes
  • 3 cloves Garlic
  • 0.5 tsp Ground Black Pepper
  • 2 tbsp Ground Cumin
  • 400 g Kidney Beans
    drained and rinsed
  • 250 g Onion
  • 4 - Spring Onions
  • 2 tbsp SuperValu Oil
  • 0.5 tsp SuperValu Smoked Paprika
  • 70 g Vegan Tomato Purée
  • 1 - Yellow Pepper


  1. Heat the oil in a large pot set over a medium-high heat. Add the onion and garlic and fry for 2 minutes, until browned. Add the spring onions and yellow pepper and cook for a further 2 minutes.
  2. Add all the beans and mix together, then stir in the chopped tomatoes, tomato purée and spices. Bring to the boil, then reduce the heat and simmer for 5 minutes. Serve hot.

    I have just made this and it's delicious.

    I regularly have a chilli bean stew at the Saturday milk market in Limerick and was on the lookout for a recipe I could emulate at home ..... I found it !!!
