Operation Transformation Recipe

100 g Carrots
cut into chunks -
1 tsp Chilli Powder

0.5 tsp Coriander Seed

60 g Frozen Peas

2 cloves Garlic
crushed -
1 tbsp Ground Cumin

1 - Onion
grated -
1 tbsp Rapeseed Oil

60 g SuperValu Baby Spinach
-
0.5 tbsp SuperValu Fresh Ginger
grated -
150 g SuperValu Potatoes
cut into quarters -
125 ml SuperValu Tomato Passata

0.5 tsp Turmeric
-
100 ml Vegan Vegetable Stock

120 g Wholegrain Rice
Method
- In a pot of boiling water, add the wholegrain rice and cook until light and fluffy.
- Heat oil in a wok and then add cumin and fry until it sizzles, then add onion and cook until mixture is soft and golden.
- Add turmeric, coriander, chilli powder, ginger and garlic and stir and cook for a minute. Then add the passata and stir. Now add stock, carrots and potatoes.
- Cook for 15 minutes until vegetables are tender, add the peas and baby spinach and cook for a further 2 minutes.

Try adding in a Bramley cooking Apple , some butternut squash too. Gives a fruity taste 👍

to get the better benefits from the turmeric (anti-inflammatory, anti-cancer, etc) you do need to add some black pepper as well (not so much but 1/4 of the turmeric) - the only addition I'd make, maybe a bit more garlic too
