Sunday 22nd Feb - Chicken and Vegetable Rice

Ingredients

Serves: 2 people

  • 0 - Black Pepper
    to taste
  • 150 g Broccoli
    chopped
  • 150 g Carrots
    peeled and chopped
  • 300 ml Chicken Stock Cube
  • 2 tsp Rapeseed Oil
  • 350 g SuperValu Fresh Chicken Fillets
    chopped
  • 100 g Wholemeal Rice

Method

  1. Place the rice in a pot with chicken stock.  Cook until light and fluffy.
  2. Place the oil in a frying pan on medium heat.  Add the chicken and cook until browned.
  3. Now add the broccoli and carrots and stir fry for 4-5mins until chicken is cooked through and vegetables are tender.
  4. Once rice is cooked, add to the cooked chicken/vegetable mixture.
  5. Season with pepper.
  6. Serve hot.
