Ingredients

  • 2 - Carrots peeled and chopped
  • 2 cloves Garlic chopped
  • 1.5 tsp Ground Cumin
  • 1 tbsp Light Soy Sauce
  • 1 - Onion peeled and sliced
  • 1 tbsp Rapeseed Oil
  • 1 - SuperValu Chillies chopped
  • 100 g SuperValu Fresh Coriander
  • 2 - SuperValu Quality Irish Pork Chops cut into strips with fat removed
  • 100 g Wholegrain Rice

Method

  1. Combine the pork, garlic, soy sauce, cumin and chopped red chilli in a bowl. 
  2. Into a pot of boiling water, place wholegrain rice and cook until light and fluffy.
  3. In a wok heat 1 tablespoon of oil. Add the onion and carrots, and cook until crisp.
  4. Add the pork mixture and cook until browned on the bottom (about 2 minutes). Stir until cooked through. 
  5. Serve with the rice.
