Spiced Cauliflower and Yogurt Soup

Ingredients

Serves: 4 people

  • 600 ml Chicken Stock Cube
  • 0 tsp Ground Coriander
  • 0 tsp Ground Cumin
  • 200 ml Natural Yogurt
  • 1 tbsp Rapeseed Oil
  • 1 - SuperValu Cauliflower
    broken into florets
  • 1 pinch SuperValu Dried Mixed Herbs
    to garnish
  • 2 cloves SuperValu Garlic
    chopped
  • 1 - SuperValu Onion
    chopped
  • 0 - SuperValu Whole Black Peppercorns
  • 1 tsp Turmeric

Method

  1. Drizzle the oil into a pan over a medium heat. Saute the garlic and onion, then season with some salt and pepper. Allow to cook for 2 – 3 minutes then stir in the spices.
  2. Pour in the stock and bring to the boil, then add the cauliflower florets and allow to simmer for 20 - 25 minutes. Remove from the heat and add half the yogurt and blitz using a handblender.
  3. Ladle into bowls and add some yogurt and some fresh herbs. Serve immediately.
