Serves: 4 people
1. Preheat oven to 180°C/350F/Gas Mark 4.
2. Heat the remaining olive oil in a large frying pan over a medium heat. Cook the garlic for 30 seconds then pour the white wine and cherry tomatoes into the pan, bring to a simmer, then continue to cook, stirring occasionally, for a further 3-5 minutes until the cherry tomato are breaking down. Add the balsamic vinegar, stir and check for seasoning.
3. Next cook the pasta. Bring a large pot of salted water to a boil. Add pasta and cook until tender, about 3 minutes.
4. Drain pasta, transfer to a large serving bowl and toss with sauce. Add the basil, then sprinkle with parmesan. Toss again and serve into a serving bowl immediately.
