Roast Leg of Lamb with Rosemary & Garlic

Preparation time: 15 minutes

Cooking time: 180 minutes

  1. Pre-heat your oven to 200°C degrees
  2. Peel and slice the potatoes and lie them in the roasting tin
  3. Slice the onion and scatter over the potatoes
  4. Slice the garlic and pull apart the sprigs of rosemary
  5. Make sharp incisions across the lamb fat and insert the sliced garlic and rosemary into the incisions.
  6. Lay the lamb on top of the potatoes
  7. Pour the chicken stock over the potatoes
  8. Cook in an oven for 1.5-2 hours if you like your lamb rare, or for up to 3 hours if you like it well done.

    I'm new to all this cooking and I am very good at nearly everything I cook.
    I'm going to cook lamb for Easter Sunday for my good mate Christy and myself, so hears hoping.
    I'm having some red wine followed by brandies.
    It should be a great ningh full of the joys of spring. 😋

    I never cook lamb but I'm trying it this year, I have read a few recipes yours seems to be the best so I'm using it. Look forward to seeing some more.

    Excellent recipe so easy and tasty only issue is recipe did not specify what type of oven fan etc
