Roast spicy chicken recipe


Operation Transformation Recipe

Preparation time: 30 minutes

Cooking time: 120 minutes


Serves: 4 people

  • 1 tbsp Black Pepper
  • 1 tsp Chilli Powder
  • 2 tsp Lemon
  • 1 tbsp Lemon Juice
  • 1 large Onion
  • 3 tsp Rapeseed Oil
  • 2 - Red Pepper
    deseeded and chopped
  • 1 medium SuperValu Free Range Whole Chicken
  • 1 tbsp SuperValu Fresh Rosemary
    finely chopped
  • 1 tbsp SuperValu Oregano
    finely chopped
  • 400 g SuperValu Potatoes
    peeled and chopped
  • 1 - Yellow Pepper
    deseeded and chopped
OT Side Salad
  • 100 g Cherry Tomatoes
  • 8 slices Cucumber
  • 100 g Spinach


  1. Preheat oven to 220C.
  2. In a bowl, add rosemary, oregano, chilli powder, lemon zest and juice and ground pepper and mix.
  3. Place chicken in an oven-proof dish.
  4. Loosen the skin of the chicken.
  5. Rub the skin with the spice mixture and also place some under the skin.
  6. Cover the chicken with aluminum foil.
  7. Roast chicken for 60 minutes. After 60 minutes remove foil and cook for a further 30 - 45 minutes until chicken is cooked through.
  8. Place the potatoes into a large pot of cold water. Bring to the boil and simmer for 10 - 15 minutes.
  9. In a bowl, mix the onions, peppers, and oil.
  10. Now place on to baking tray in a single layer. Roast for 30 minutes until soft and tender.
  11. Make your OT side salad by mixing spinach, cherry tomatoes and cucumber in a large bowl.
  12. Serve your chicken without skin and vegetables with the OT side salad.
