Siobhan Berry of Mummy Cooks’ Raspberry and Mint ice lollies are like summer on a stick! Super easy and quick to make, this is a great recipe to make with the kids. Mummy Cooks approved!

Serves: 8 people

  • 1 drop Lemon Juice
  • 10 - Mint Leaves
  • 50 g SuperValu Icing Sugar
  • 500 g SuperValu Raspberries


  1. Place the Raspberries, icing sugar and mint leaves in a blender and blend until smooth.
  2. Squeeze in the lemon juice and blend.
  3. Add the mixture to the mould.
  4. Place in the freezer overnight and enjoy.
