1 litre Beef Stock

1 - Cardamom Pods

1 - Cinnamon Stick

200 g Rice Noodles

200 g Roast Beef
thinly sliced -
1 - SuperValu Chillies
red, deseeded and thinly sliced -
4 tbsp SuperValu Fresh Coriander
chopped -
1 tsp SuperValu Fresh Ginger
grated -
1 tbsp SuperValu Fresh Mint
chopped -
3 - SuperValu Scallions
chopped -
2 - SuperValu Star Anise

1 litre Vegetable Stock
Method
- Bring the beef and vegetable stocks to the boil with the star anise, cinnamon stick, cardamom and grated ginger. Simmer for 30 minutes, covered, then remove the spices from the broth.
- Add the sliced beef and rice noodles and continue to simmer for 4 minutes. Just before serving, add the spring onions, chilli, lime juice, coriander and mint. Stir and serve straight away.
