  1. Preheat the oven to 160°C/gas mark 3. Line two baking trays with nonstick baking paper.
  2. In a large bowl, combine the peanut butter with the caster sugar until fully incorporated. Mix in the egg, baking powder and vanilla extract, then fold in the chocolate pieces.
  3. Roll the dough into 18 small balls and coat in some extra caster sugar. Place on the prepared trays and gently press down with a fork.
  4. Bake in the oven for 14 minutes, until golden brown. Remove from the oven and allow to cool completely before lifting from the tray. Sprinkle with icing sugar to decorate.
