This is a deliciously refreshing salad.
Serves: 4 people
100 g Black Olives
0 - Black Pepper
1 large Fennel Bulb
halved and thinly sliced
3 tbsp Olive Oil
0 - Salt
1 - SuperValu Orange
4 - SuperValu Orange
peeled and pith removed, sliced into pinwheels
2 handfull SuperValu Rocket Leaves
- Whisk the olive oil with the orange juice, salt and pepper. Toss with the rocket and arrange onto chilled serving plates.
- Arrange the oranges, olives and fennel on the plates and drizzle with the leftover dressing. Sprinkle with salt and pepper to taste and serve immediately.
