Orange fennel and olive salad recipe


This is a deliciously refreshing salad.

Serves: 4 people

  • 100 g Black Olives
  • 0 - Black Pepper
    to taste
  • 1 large Fennel Bulb
    halved and thinly sliced
  • 3 tbsp Olive Oil
  • 0 - Salt
    to taste
  • 1 - SuperValu Orange
  • 4 - SuperValu Orange
    peeled and pith removed, sliced into pinwheels
  • 2 handfull SuperValu Rocket Leaves


  1. Whisk the olive oil with the orange juice, salt and pepper. Toss with the rocket and arrange onto chilled serving plates.
  2. Arrange the oranges, olives and fennel on the plates and drizzle with the leftover dressing. Sprinkle with salt and pepper to taste and serve immediately.
