A delicious and filling salad. Great to make for lunch.
Serves: 4 people
1 - Red Onion
1 - SuperValu Courgette
250 g SuperValu Fusilli Pasta
1 - SuperValu Lemon
2 tbsp SuperValu Olive Oil
3 - SuperValu Peppers
deseeded and sliced
0 - SuperValu Salt
200 g SuperValu Semi Sundried Tomatoes
- Preheat oven to 180°C/350°F/Gas Mark 4. Cook the pasta as per pack instructions, drain and allow to cool.
- Drizzle with some oil.
- Place the courgette, onion, sun dried tomatoes and peppers on a baking tray.
- Season with salt and pepper.
- Drizzle some olive oil over the vegetables and place in the oven for 20 minutes.
- Remove from the oven and allow to cool.
- Then, in a large salad bowl combine the pasta with the vegetables, squeeze the juice of 1 lemon and season with some black pepper.
