This is a fantastic vegetarian option, if you wish you could add some cooked chicken, prosciutto or cheeses to this salad.

30 - Balsamic Vinegar
10 - Cherry Tomatoes
1 - Green Pepper
1 - Red Pepper
1 - SuperValu Courgette
sliced into ribbons
1 bunch SuperValu Fresh Basil
1 bunch SuperValu Fresh Parsley Flat Leaf
2 cloves SuperValu Garlic
75 - SuperValu Olive Oil
0 - SuperValu Salt
500 g Supervalu Tagliatelle
- Cook the Pasta as per pack instructions in some lightly salted water, drain and place into a large serving bowl.
- In the meantime, add some oil to a large pan and add the peppers, garlic and courgette, toss in the pan for 2 – 3 minutes then pour in the balsamic vinegar to deglaze the pan.
- Cook for a further minute then remove then contents of the pan to the pasta and combine.
- Add the chopped olives, cherry tomatos and fresh herbs, then drizzle with some olive oil.
- Season with some salt and pepper.
- Serve immediately.
