The health benefits of Goji are immense, slightly bitter, but the sweet batter compliments their flavour. I serve these with some lemon syrup.

In a bowl combine the dry ingredients together, once combined create a well in the centre of the flours.
Add the egg and honey and start to whisk slowly into the flours. Add a little buttermilk at a time until a smooth batter is achieved. Add the lemon zest, lemon juice, vanilla extract and goji berries to the mix and stir.
Cook on a lightly greased non stick pan over a low - medium heat until lightly golden on both sides.
