Lemon goji pancake recipe


The health benefits of Goji are immense, slightly bitter, but the sweet batter compliments their flavour.  I serve these with some lemon syrup.

Preparation time: 15 minutes

Cooking time: 4 minutes


Serves: 8 people

  • 2 tsp Baking Powder
  • 2 - Fresh Egg
  • 50 g Goji Berries
  • 60 g Honey
  • 2 - Lemon
    zest and juice
  • 0 - Lemon Syrup
    to serve
  • 120 g Plain Flour
  • 0.25 tsp Salt
  • 60 g Spelt Flour
  • 200 ml SuperValu Buttermilk
  • 60 g SuperValu Wholemeal Flour
  • 1.5 tsp Vanilla Extract


  1. In a bowl combine the dry ingredients together, once combined create a well in the centre of the flours.
  2. Add the egg and honey and start to whisk slowly into the flours. Add a little buttermilk at a time until a smooth batter is achieved. Add the lemon zest, lemon juice, vanilla extract and goji berries to the mix and stir.
  3. Cook on a lightly greased non stick pan over a low - medium heat until lightly golden on both sides.
  4. Serve with some lemon syrup and zest if desired.
