Huevos rancheros recipe

RECIPE OVERVIEW

Breakfast, lunch, supper, this is my idea of the perfect snack. Fresh salsa, slices of ham and a lovely soft fried egg on top – what’s not to love?

Preparation time: 15 minutes

Cooking time: 5 minutes

Ingredients

Serves: 4 people

  • 4 tbsp Fat Free Fromage Frais
  • 4 - Fresh Egg
    soft fried
  • 8 slices Ham
    thinly sliced
  • 0 - SuperValu Fresh Coriander
    to garnish
  • 2 - SuperValu Scallions
    chopped, to garnish
Pancakes
  • 1 tsp Baking Powder
  • 0 - Black Pepper
  • 1 - Fresh Egg
  • 80 ml Milk
  • 1 tbsp Milled Organic Flaxseed
  • 50 g Polenta
    finely ground
  • 0 - Salt
  • 1 tbsp SuperValu Sunflower Oil
  • 100 g SuperValu Wholemeal Flour
Salsa
  • 2 tbsp Cider Vinegar
  • 2 cloves Garlic
    chopped
  • 3 - Shallots
    chopped
  • 1 tbsp SuperValu Fresh Coriander
    chopped
  • 4 - Tomatoes
    chopped

Method

  1. Firstly prepare the salsa. Combine the chopped ingredients in a bowl and stir in the vinegar, season to taste. Set aside until required.
  2. In the meantime, prepare the pancakes. Combine the dry ingredients in a bowl and create a well in the centre.  Whisk in the egg and milk until a thick batter is achieved.
  3. Heat the pan and add a drizzle of oil, add the batter, one ladleful at a time, and flip once the bubbles rise to the top of the batter as it cooks.  Repeat until all the batter is cooked.
  4. Place a pancake onto each plate and add some salsa, a slice of ham and top with the soft fried egg. Sprinkle with some chopped spring onions. Season and serve with some fat free fromage frais on the side.
