Alot of peoples favourite fish marinated with an oriental twist.

  1. Peel and finely slice the ginger and add it to a bowl.
  2. Carefully crush the garlic with the blade of a knife. Peel, thinly slice and add to the ginger.
  3. Chop up the spring onions, discarding the ends, and add to the bowl.
  4. Grate the zest of the lime on top, then chop in half and squeeze in the juice.
  5. Drizzle in some honey and follow that with the white wine, the soya sauce and the water.
  6. Finish off with the olive oil and give it a whisk.
  7. Lay in the mackerel fillets. Make sure they are fully coated by the marinade. Place in a fridge for 20 mins.
  8. When cooking on the barbecue, make sure the coals are fully white before placing on the fish.
  9. Brush over a little of the marinade as they are cooking.
  10. Serve immediately.
