1 pinch Black Pepper
0.5 tsp Chinese 5 Spice
50 g Chutney
6 - Dried Apricots
1 - Fresh Egg
50 g Plain Flour
1 pinch Salt
100 g SuperValu Fresh Breadcrumbs
120 g SuperValu Goats Cheese
- Combine the goats’ cheese, chopped apricots and some freshly ground black pepper in a bowl.
- Prepare three separate shallow bowls: the flour in the first bowl, the beaten egg in the second bowl and the breadcrumbs seasoned with the five-spice powder, salt and pepper in the third bowl.
- Roll the goats’ cheese mixture into walnut-sized balls. Coat them in the flour, then the egg and then the breadcrumbs.
- Preheat the fryer to 180°C. Once the oil has reached the required temperature, place the cheese croquettes into the basket and lower them into the oil. Cook for 1 to 2 minutes, until golden. Add a cocktail stick and serve with some mango chutney
