2 - Carrots
2 sticks Celery
1 tin Coconut Milk
1 tbsp Curry Paste
Mai Ploy or Thai Gold
1 - SuperValu Leek
1 small SuperValu Onion
1 pinch SuperValu Salt
Take care when seasoning as Coconut Milk tends to be salty
3 large Sweet Potatoes
0 - Vegetable Stock
- Sweat off vegetables in a little bit of butter, curry paste and some fresh herbs.
- Add in coconut milk and some water and bring vegetables to a boil and then a simmer.
- Mix in additional liquid if required, blitz and return to the heat.
