RECIPE OVERVIEW

Simple, healthy and good for you. Great if you play alot of sport.

Preparation time: 5 minutes

Cooking time: 10 minutes

Ingredients

Serves: 1 person

  • 0 - Black Pepper
    to season
  • 3 - Fresh Egg
  • 0.5 - Red Onion
    halved and chopped
  • 0 - SuperValu Fresh Parsley Flat Leaf
    or fresh mixed herbs
  • 0 handfull SuperValu Grated Cheddar Cheese
  • 1 tbsp SuperValu Olive Oil
  • 2 - SuperValu Rashers
    chopped
  • 0 - SuperValu Salt
    to season

Method

  1. Preheat the grill.
  2. In a bowl, whisk together the eggs and seasoning.
  3. Drizzle the oil on an ovenproof pan over a medium heat and add the bacon. Cook for a couple of minutes and then add the onion.
  4. Fry for a further 3 minutes. Remove from the heat and then add to the egg mixture.
  5. Add the mixture back into the pan and cook for 5 minutes over a medium heat.
  6. Remove from heat and sprinkle the cheese and herbs over the top.
  7. Transfer to the grill and cook for 5 minutes.
