Chickpea Summer Salad


Chickpeas are also known as Garbanzo beans. If you are looking for a meat free alternative look no further than this chickpea salad, it is high in protein and fiber and has been known to help reduce cholesterol. Their buttery texture and nutty flavour make them a welcome additional to any salad dish.

Serves: 4 people

  • 1 tin Chickpeas
  • 1 tsp Ground Cumin
  • 1 - Red Onion
    halved & thinly sliced
  • 1 - SuperValu Cucumber
    finely sliced
  • 1 tbsp SuperValu Extra Virgin Olive Oil
  • 1 packets SuperValu Feta Cheese
  • 1 bunch SuperValu Fresh Mint
    roughly chopped
  • 1 bunch SuperValu Fresh Parsley Flat Leaf
    roughly chopped
  • 2 cloves SuperValu Garlic
  • 1 - SuperValu Lemon
    zest & juice
  • 0 - SuperValu Salt
    to season
  • 2 - SuperValu Tomato


  1. Place the chickpeas into a sieve and rinse under some cold water.
  2. Place the chickpeas into a bowl and add the vegetables, herbs and cheese.
  3. Season with salt and pepper.
  4. Stir to combine all the ingredients then cover until serving.
