400 g Chickpeas
drained and rinsed -
1 - Lemon Juice
squeezed -
1 medium Red Onion
finely chopped -
1 handfull SuperValu Fresh Coriander
chopped -
1 tsp SuperValu Fresh Ginger
chopped -
1 handfull SuperValu Fresh Mint
chopped -
1 - SuperValu Green Chilli
finely chopped, or half a tsp of chilli powder -
2 tbsp Vegetable Oil
Method
- Heat a pan until it’s smoking hot, then add the chickpeas and cook for about 1 minute, until the shiny moisture from the chickpeas disappears. Add the rest of the ingredients and stir for about 30 seconds. That’s it! This quick, easy and wholesome salad is now ready to serve.
