Chicken power salad recipe


When I think of protein bowls I think of power and strength; we don’t want limp lettuce and a few measly bits of veg scattered around. We want crunch and bite with lots of fresh crisp flavours.

Spices to Coat the Chicken
To Serve


  1. Toss the chicken into a warm pan with the herbs and spices until coated and warmed through.
  2. Heat the rice as per packet instructions. Fry the sweetcorn or have cold.
  3. Prep the veg: Slice the peppers, onion, tomatoes and avocado.
    Build your bowl: Add the lettuce first, then the rice and tuck it into one side, then load in the veggies and top with the chicken, coriander, a squeeze of lime juice and a lime wedge to garnish.
  4. Add a dollop of cool sour cream, garnish with chilli flakes and enjoy!
