Beetroot mini burgers


The beetroot blends well with the beef to make really moist burgers that kids love. They’re a great way of sneaking in extra vegetables for a fussy eater.

  1. Combine the beef mince, beetroot and shallot in a large bowl and season with black pepper. Divide the mixture into eight mini burgers, then chill in the fridge for 15 minutes.
  2. Heat a little olive oil in a pan set over a medium heat. Cook the mini burgers in batches for 3 to 4 minutes on each side, making sure the burgers are cooked through.
  3. Serve in mini wholemeal rolls or pitta bread with cherry tomatoes and cucumber batons on the side.

    Fabulous recipe, the addition of the beetroot keeps the burger moist and the flavour is not noticeable which is great for children who may turn up their noses to beetroot!
